This delicious healthy soup is simple to toss together and will leave everyone at your table full and satisfied. By leaving out heavy creams and cheeses, you can feel confident that you're nourishing your body and soul without the guilt!
Ingredients
1 Tbsp Olive Oil
1 Medium Yellow Onion, Chopped
3 Cloves Garlic, Minced
1 (28 oz) can Crushed Tomatoes
4 cups Low Sodium Chicken Broth
1 (10 oz) can Enchilada Sauce (hot if desired)
1 (4.5 oz) can Chopped Green Chiles
1/4 teaspoon Red Pepper Flakes
1 Tbsp Cumin
1 Tbsp Chili Powder
1 teaspoon Salt
1/2 teaspoon Black Pepper
1 (15 oz) can Black Beans
1 cup Fresh or Frozen Corn
3 cups Shredded Rotisserie Chicken
Juice of 1 Lime
Toppings (recommended): Cilantro, Avocado, Shredded Cheese, Blue Corn Strips
Directions
In a large dutch oven or pot on medium high heat, drizzle oil and sauté onion for 3 to 4 minutes then add garlic, sautéing an additional minute. Add the rest of the ingredients (except for lime juice) and bring to a boil, then cover and simmer for about 30. Add lime juice and any additional toppings you prefer. Enjoy!
